Working to Train the Butchers of the Next Generation
With the ever-growing market for ethical and local meat, there is increasing demand for skilled butchers to facilitate the farm to plate process of bringing meat to the table. Not only in Vermont, but in the country as a whole, there is a need for skilled butchers to staff every step of the meat food chain - from slaughter to value added processing to retail.
Mad River Food Hub is working to fill that demand by offering classes to educate the next generation of butchers. Our class offerings range from a broad overview of cutting beef, pork, chicken, and lamb to deeper dives into sausage making, smoking, and HACCP food safety plans.
