Babette's table introduces new charcuterie cart at the Waitsfield Farmer's Market

Babette’s Table, a charcuterie maker committed to locally sourced, pasture-raised meat, recently received their custom made meat cart.  Based on traditional French meat carts and custom fabricated to rigorous USDA and state standards, it represents a serious upgrade to their weekly stall in the Waitsfield Farmers Market.

Initially focusing on high quality hand made salami, sausages, and bacon, Babette’s Table has recently rolled out the first USDA inspected whole-muscle charcuterie made in Vermont.  Her Lomo, Noix de Jambon, Ventreche, and Coppa are carefully butchered, salted, and aged – the end result is deeply flavorful and evocative of the time and effort spent throughout the whole process.  Her new cart will be a full featured charcuterie shop, with refrigerated meat cases displaying the products and the ability to cut and slice to order.

Started in 2016, Babette’s Table came about after owner Erika Lynch returned from her time studying traditional butchery and charcuterie in France.  Recognizing the quality meat being raised by Vermont’s livestock farmers, Erika began to source pork from Von Trapp, Snug Valley and Sugar Mountain farms.  The Mad River Food Hub was vital in incubating her business with it’s meat processing rooms, along with allowing her to utilize what is currently the only USDA inspected curing facility in Vermont.

You can find Babette’s Table at the Waitsfield Farmer’s Market on Saturdays through October 14th, or at the Mad River Taste Place, located next to the Farmers Market at 89 Mad River Green.

Mad River Taste Place offers curated retail for all food and beverage makers in the Mad River Valley. The Mad River Taste Place is the home to Vermont Cheese Council and also hosts the Vermont Cider Makers Association, offering cheeses and ciders from every Vermont Maker.
